Sautéed Prawns
in an Oriental Style
Traditional Tunisian recipe

- 300 ml (1/2 pint) olive oil
- 5 garlic cloves, finely crushed
- 3 dried piments de Cayenne peppers, or other small, very hot, dried chillies, finely crushed (including seeds)
- 800 g (1¾ lb) medium-size raw prawns, shelled
- 2 tablespoons paprika
- 1 teaspoon salt
- 3 tablespoons finely chopped fresh flat-leaved parsley
Heat the oil in a large tagine plate. When very hot, add the garlic and crushed Cayenne peppers. Fry for 1 minute. Add the prawns and paprika and stir-fry for 3 minutes, on high heat. Sprinkle with the salt and parsley and serve, uncovered, and still sizzling.
Serves 4 as a main course.
