Salad Arab
This condiment, similar to the traditional Greek salad, is a great accompaniment to any meal.
2 large tomatoes, cored and cut into medium dice
1 red onion, cut into medium dice
2 pickling cucumbers, cut into medium dice
1 green bell pepper, cored, seeded and cut into medium dice
2 to 4 tablespoons extra virgin olive oil
Salt and pepper to taste
Lemon juice to taste
Combine the diced tomatoes, red onion, cucumbers and bell pepper in a mixing bowl.

Drizzle the diced vegetables with olive oil and toss until they are evenly coated with oil.

Season with salt, pepper and enough lemon juice to give a tangy dimension to the dressing.

Serves 6 to 8 as a condiment.
