Rice with Dried Yellow Fava Beans

- 2 cups Basmati rice
- 2 onions, peeled and thinly sliced
- 1/4 cup oil
- 1 tablespoon turmeric
- 1 ½ cups dried yellow Fava beans, cleaned, washed, soaked in 2
cups water for 2 hours and drained
- 1 tablespoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon ground cinnamon
- 1 teaspoon Persian allspice (Advieh)
- 1/2 cup clarified butter
Clean and wash 2 cups rice in warm water.
In a deep, non-stick pot, brown the onions in oil, add turmeric, beans, six
cups of warm water, salt, pepper and cinnamon. Bring to a boil. Reduce heat,
cover and simmer over medium heat for 40 minutes.
