Sweet Almond Pudding with Dates
1/3 cup rice flour
1/3 cup ground toasted almonds
½ cup water
3½ cups milk
¼ cup sugar
¼ dates, pitted and sliced
Mix together rice flour and almonds in a small bowl. Add water in a slow stream, stirring constantly, until smooth. Thin to pouring consistency with some of the milk.

Pour mixture into a heavy saucepan. Add remaining milk and slowly heat to boiling over medium heat, stirring constantly. Remove from heat and add sugar slowly, stirring constantly. Add sliced dates. Return to boiling. Allow to boil for 2 to 3 minutes, or until thickened.

If necessary, hot pudding may be thinned with additional milk.

Serves 6.
