Lebanese Salad

- ¼ cup bulgur
- 3 cups water
- 1 cucumber, diced
- 2 tomatoes, diced
- 3/4 cup green onion, chopped
- ¼ cup olive oil
- ¼ cup lemon juice
- 1 teaspoon salt
- ¼ teaspoon freshly ground pepper
Soak bulgur in water for 2 hours, drain. Mix bulgur, cucumber, tomatoes, green onions, olive oil, lemon juice, salt, and pepper. Mix thoroughly. Adjust seasonings to taste.
Serves 4.
