Halva

- 1/2 cup halva flour (see note) or regular flour
- 1 cup vegetable oil
- 1 cup sugar
- 1 cup rose water
- 1 teaspoon saffron
- 1 cup water
- 1/4 cup chopped pistachios
Heat oil and slowly add flour. Cook, stirring, until flour becomes golden
brown and oil is absorbed into flour. In another pan combine water, sugar
and rose water. Heat until sugar melts. Very slowly, stir sugar-water
mixture into flour-oil mixture. Cook over low heat until oil starts to
reappear. Remove to platter to cool, then sprinkle with ground pistachios.
Halva can be sliced or eaten with a spoon.
