Cheese Sauce
Saudi Arabia
2 tablespoons plain flour
½ pint milk
½ teaspoon paprika
4 oz. grated cheese
1 tablespoon butter
1 large egg yolk
½ teaspoon salt
Heat butter in a saucepan, add flour and stir well. Cook for 5 minutes, stirring all the time. Add the milk gradually, taking care not to let any lumps form, and simmer for a few minutes until sauce begins to thicken.

Remove from heat, add paprika and salt and well beaten egg yolk. When this is smooth and velvety add the grated cheese.
