Arabian Olive, Onion and Orange Salad
This refreshing combination of ingredients is good any time. Chances are, you already have everything you need in your kitchen.

- 4 large oranges, peeled and cut into small pieces
- 1 small onion, thinly sliced and separated into rings
- ½ cup halved black olives
- 1 tablespoon olive oil
- 1 teaspoon fresh lemon juice
- 4 lettuce cups (single curved leaves)
- Place the oranges, onions, and olives in a medium-sized bowl, and toss to mix.
- Drizzle the olive oil and lemon juice over the orange mixture, and toss gently.
- Divide the salad evenly among the 4 lettuce cups. This salad is most flavorful at room temperature, so serve immediately.
Yield: 4 servings.
