Arabian Olive, Onion and Orange Salad
This refreshing combination of ingredients is good any time. Chances are, you already have everything you need in your kitchen.
4 large oranges, peeled and cut into small pieces
1 small onion, thinly sliced and separated into rings
½ cup halved black olives
1 tablespoon olive oil
1 teaspoon fresh lemon juice
4 lettuce cups (single curved leaves)
  1. Place the oranges, onions, and olives in a medium-sized bowl, and toss to mix.

  2. Drizzle the olive oil and lemon juice over the orange mixture, and toss gently.

  3. Divide the salad evenly among the 4 lettuce cups. This salad is most flavorful at room temperature, so serve immediately.
Yield: 4 servings.
